Les Perles de la Raspille Grande Cuvée Brut 750ml

Les Perles de la Raspille Grande Cuvée Brut is the fine metronome among the sparkling wines of Cave Biber: dry, precise, elegant and with that quiet tension that makes good bubbles more than just a mere fizz. The Raspille not only gives this wine its name but also its image: a clear flow, small swirls, bright movement – bubbles that do not jump, but dance.

In the glass, it appears bright, clear and lively with fine, even bubbles. The nose is fragrant with yellow apple, pear, citrus zest and white flowers. After at least 12 months of yeast aging, brioche, almond, fine pastries and a subtle nutty depth are added. The aroma remains precise and fresh, with a cool mineral note in the background.

On the palate it is dry, taut and elegant. Savagnin Blanc – known as Heida in the Valais – brings structure, spice and alpine freshness. The acidity of 6 g/l provides tension, while the dosage of 2 g/l keeps the wine clear and straightforward. The bubbles are fine and creamy at the same time, the fruit remains bright, and the finish is fresh, slightly salty and supported by delicate yeast spice.

Culinarily, this Grande Cuvée pairs well with dishes that have finesse and texture: oysters, marinated char, trout with herb butter, scallops, puff pastry with mushrooms, cheese gougères, leek tart, asparagus with hollandaise, saffron risotto, chicken suprême or a festive brunch with egg dishes, salmon and warm pastries.

Serving suggestion: enjoy at around 8 °C. Serve in a slender sparkling wine glass or small white wine glass, so that the bubbles, freshness and yeast notes come together beautifully.

A brut with fine yeast melt, alpine drive and raspille rhythm – precise enough for the first toast, elegant enough for the whole table.
